I've been busy that I had no time to try baking new cake flavors.
Its the time of the year where me and my husband celebrates our birthday, yes "our birthday" my husband's birthday is on 19th while my birthday is on 21st just a day interval.
So we always have a one combined celebration at home. So we invited just some of our relatives for a lunch birthday celebration.

Though I can buy ready made cake of any flavors to any leading bakeshop at the mall, but I chose to bake my own coz its been long that I've been wanting and plaaning to try this "Ube Macapuno Cake" but I can't find time to make one. So now, I dont have excuses..



here's my recipe for my ube macapuno cake

for the cake:
1 bottle of ube jam
3 cups of cake flour
9 egg yolks
9 egg whites
3/4 tsp of cream of tartar
1 cup of milk
3 cups of sugar
6 tsp of baking powder
3/4 cup of vegetable oil
3/4 tsp of salt

for the frosting
1 small box (200g) of whipping cream
macapuno
confectioner sugar
1/3 cup of water

Baking:
1. Combine all the dry ingredients (cake flour, sugar, baking powder and milk). And then the wet ingredients in a separate mixing bowl.
2. Then mix the dry and the wet ingredients.
3. To make meringue, add the cream of tartar to the white eggs and mix on high speed using the electric hand mixer until you reach soft peak.
4. Fold gently the batter to the meringue.
5. line parchment paper to the baking pan and pour the batter to it.
6. Bake for 20minutes or until the stick inserted comes out clean.

For the icing: mix all the ingredients & whip it in a high speed using electric hand mixer and add the confectioner sugar to taste.
Then decorate.

Kaldereta sa Gata

Kaldereta sa gata


This recipe is from my dad. Who is half kapampangan and half Ilocano. He's really good in cooking.
I grew up watching him cooked for us our meal everyday and even in all our occassions & gatherings.
Every dishes he made is a sure hit. And it gains so much compliments.
He tought me some of his recipes and some I learned by just watching him.

And now as I become a mother I'm in charge for budgetting and cooking for my own family.
Mostly, during my leisure time (during weekends) I found myself in the kitchen cooking the whole day.
Coz I make it a point that during weekend we can sit down for a meal have a chit-chat while enjoying the home cooked meals I prepared. I always get compliments from my eldest son "Mommy, ang sarap ng luto mo. Thank you mommy" and a kiss of appreciation from hubby.
Simple gesture that means to me a lot. That inspire me to cook for them everyday.

Now, I'm sharing you our recipe for kaldereta sa gata which is one of my favorite viand.

Ingredients:
1/2 kilo of Pork/Beef/Buto-Buto/Chicken (whichever you prefer)
1 Gata (pure no water mixed and pls dont use instant gata coz the taste differs)
1pack of Tomato Sauce
1 small can of Liver spread
1pc Red bell pepper
Siling Labuyo (depends on how spicy you want it)
4 pcs potatos cut into halves
4 pcs carrots cut into halves
1/4 of butter
onion
garlic
pepper
salt to taste
1 cup of water



Procedure:
1. Saute onion, garlic, your choice of meat, potato and carrots using butter. Then add the pepper and salt to taste.
2. Add the water, tomato sauce, gata, bell pepper and liver spread. Then let it simmer and wait until the meat becomes tender and the sauce become thick.
3. Add siling labuyo if you prefer it spicy.
4. Serve and enjoy!

My home made beef burger patty

As a mom it is my most important task every week,  budgeting , planning for everyday meal and baon of my son at school. As much as possible I don't want him to eat processed foods with more of preservatives. So instead of buying those processed meats or ready to cook patties etc.
I make it a point to personally prepare and make this patty so he can enjoy fresh, healthy and real beef patty.

I'm sharing you my beef burger patty recipe.

The beef burger patty (taste like jollibee burger patty)


1/4kilo of ground beef.
2tablespoon of flour
1 finely chopped onion
salt, pepper, soy sauce to taste (it is up to you how much you will put)
1pc egg


combine all ingredients, then flat it on your palm and fry. 



note: do not add too much flour coz it will overpower the taste of beef.
 

servings: 6 patties
 

We also had this for our snack baon as well (me and hubby) I just added some dressing, and vegetables (tomato & lettuce) and cheese.

whipping cream




Frosty boy whipping cream review

I wanted to explore, know and taste all different kinds of icing. I already know how to make buttercream, boiled icing (which I'm currently using) and choco fudge. It's now time to try the whipping cream for the cake of my youngest son.


I bought a Frosty boy whipping cream powder icing days before.

 

It is stated at the back of the box that for every 1kg of powder you will add 1 liter of water. I only bought 200g of frosty boy.
So I just added 3/4 cups of cold water and whip it with my electric hand mixer in full speed. just whip it until you reach your desired fluffiness. Then you may add food color or flavor if you want.

The 200g frosty boy is just enough to cover an 8x4in cake and also it is also the filling I've used for this cake.




 




The taste: It has buttery taste, creamy and a little bland, maybe because it is upto you if you want to add flavor to it. You may add confectioner sugar if you prefer it sweet, or add chocolate to make it a chocolate ganache or add fruits or jam. Whichever you like.
 

For me, I added a little confectioner sugar coz we dont want bland icing nor too sweet as well. Taste like Goldilocks icing.


It doesn't melt easily. I tried leaving the cake on top of our table for quite some hours and it doesn't melt easily.

update:

I also tried the other brand of whipping cream which I will not mention the brand name. The verdict: It is not that delicious, it doesn't have that creamy taste. Taste so Bland. At first it set's firm after few minutes it became so runny. Just a waste of time, money and energy.

HOW TO MAKE A YEMA CAKE

Yeah its weekend again, time to try new things in my kitchen..So what's for this weekend? I found something on the net that makes me really curious...Yema cake, seems so easy to make and since I've got all the ingredients in my kitchen, why not give it a try.

I will share with you the procedures and ingredients I used in making this luscious yema cake.




INGREDIENTS:

CAKE BATTER
(I got this thru searching the google, sorry I forgot the link and what site it is)    

1 and 1/4 cup of sifted flour
    3/4 cup sugar
    2 teaspoons baking powder
    1/2 a teaspoon of salt
    1/4 cup corn oil or peanut oil
    1/3 cup water
    1/4 teaspoon cream of tartar
    3 egg whites
    3 egg yolks


YEMA FROSTING/FILLING (Adapted from BAKE HAPPY blog)
8 egg yolks, lightly beaten
1 tsp vanilla extract
1/4 cup cornstarch
300 ml condesnsed milk
300 ml water (just use the condensed milk can to measure this  :) )

FOR CAKE

1. Preheat the oven to 325 F.



2. Combine all the dry ingredients : cake flour, salt, sugar, and baking powder in a large bowl. Make a little well in the center and pour in the oil, water egg yolks and flavoring. Beat for 2 minutes until smooth.

3. In another bowl, beat the egg whites with the cream of tartar. This is what will make the cupcake so fluffy, so it's very important to make very stiff peaks.



4. Gently fold the eggs into the first mix. Beware to not stir, but rather fold them together. Do this until it's well blended together.




5. Cut a round parchment paper
and make it as same size of your baking pan and put it into the bottom of the baking pan and then pour the batter unto it.
 

6. Put in oven for about 20 minutes. Or until cake springs back when lightly touched with fingers.



Yema or Milk Custard frosting:
     
Pour condensed milk into a small pan.



In a small bowl, mix water and cornstarch together. Add to the condensed milk and start heating up the pan.

 
While still not too hot, whisk in the yolks. Don’t add in one go, do it slowly, we don’t want sweetened scrambled eggs. Please whisk continously, until thick.

Whisk, whisk, whisk until the texture is of piping consistency. Set aside to cool down. No need to cover, just whisk once in a while so a skin won’t form.

Cake decoration:   
Slice the chiffon cake in half horizontally, to make two rectangular cake. Spread part of Yema frosting at the top of 1st half of Chiffon cake. Put back the half of the cake and cover the whole cake with the custard. Garnish with grated cheese and serve with hot or cold drinks.

Choco chiffon cupcake/cake recipe





I googled for recipe of chiffon cake but after trying many, this one is the best I have tried. I just made the flavor into chocolate and even chocolatier by adding cocoa and coffee... yumyum...

And now I'm sharing you guys my recipe for my choco chiffon cupcake.


Ingredients

    1 cup of cake flour
    1/4 cup of unsweetend cocoa (high grade cocoa is adviceable)
    1 1/2 teaspoon of instant coffee (this will deepen the taste of chocolate)
    3/4 cup sugar
    2 teaspoons baking powder
    1/2 a teaspoon of salt
    1/4 cup oil
    1/3 cup water
    1/4 teaspoon cream of tartar
    3 egg whites
    3 egg yolks


Procedure:

1. Preheat the oven to 325 F.
2. Combine all the dry ingredients : cake flour, salt, sugar, cofee and baking powder in a large bowl. Make a little well in the center and pour in the oil, water egg yolks and flavoring. Beat for 2 minutes until smooth.
3. In another bowl, beat the egg whites with the cream of tartar. This is what will make the cupcake so fluffy, so it's very important to make very stiff peaks.
4. Gently fold the eggs into the first mix. Beware to not stir, but rather fold them together. Do this until it's well blended together.
5. Put batter into your cupcake liner lined in cupcake baking pan.
6. Put in oven for about 20 minutes. Or until cake springs back when lightly touched with fingers.


-This will make 1 dozen 3oz cupcakes. 
-if your going to use this recipe for cake you need to triple the measurements. It will make a 8x4" round cake.

What to do when the job becomes mundane

Being employed for several years, having same old routines/task everyday makes your job becomes mundane for you.
Admittedly, I sometimes experience this at work. There are days when work becomes dull and not just enjoyable. However I tried to avoid this negative feeling towards work. So I've listed ways to eliminate this.

Here's what's on my list:

1. Reason why you work.
     Ask yourself, what is your main purpose why your working?
Is it just to say you have a good and regular work? or is it just to make a living? or you work for your loved ones who depends on you? or you really love your work and it's the fullfillment of your dreams? Dwell on whats your real purpose on working, from there you may get an inspiration.

     If you were to ask me, Why do I work? at first its for my self-worth (when I was single) to be able to achieve something and its the fullfillment of my dreams (coz I was practicing my degree). It's more of having a work that is related to my course. It is what I've dreamed during school days and practically speaking its a source of income to provide for myself.
Now that I have a family of my own, working brings deeper meaning to me, of course to provide for my loved ones (especially for my children) who depends on us (me and my hubby), second self-worth as a woman and to practice my degree and not just to depend on my husband.
 
     Everyday, Its my striving reason why I need to wake up early morning to continually work. Coz there's someone who depends on me. That I cannot stop working. Because Its like a domino effect. Everything and everyone who depends on me will be affected.
And I'm doing it because I love them and I love my work.

2. Love your work.

     If you don't love your work, it will become just a daily routine for you or just a must do thing for you. Your work is the source of your income. There are many people who are jobless nowadays. You are too lucky to be employed.
So make it worth and learn its value. If you will love your work, the work will love you as well.

3. Make your work enjoyable.

     Organize everything that you do, "Think out of the box", find ways to improve what you do. You don't need to be stocked up in your daily routine with the same old procedure. If you can find ways to improve your work habits you'll finish your work earlier. 
And make everyday a learning day. So that every morning you'll look after what you will learn on the next day.  


  

4. Strive for Challenges.

     Never limit yourself with just what work is been given to you. Accept chalenging task that will thrill your brain and will make your nerves energetic. This will bring excitement while doing your task. And you'll soon lessen the boredom at work.
  
5. Think your job as an accomplishment.

     Think in the other positive sides. Every task you finished is an accomplishment. So be proud and look at it everyday to boost your determination in accomplishing something.

6. Associate yourself with people of positive personalities and attitude towards work.

     Be friends or mingle with co-workers that has positive values towards work. Who are hardworking, energetic, and has the perseverance at work and people that are trustworthy. Having them around will help you to enjoy your work everyday and they will inspire and help you to have a good attitude and outlook towards every job/task. Aiming and setting the same goal at work will help you together to strive to work harder. Never surround your self with co-workers that are lazy, irresponsible and undetermined.They will just bring you negative vibes.

7. Reward yourself.

     After the long work, have a day off and make a day for yourself, or go to places you want to go, or buy things that you've been wanting. Reward yourself even with the smallest thing. Enjoy the fruit of your work and hard earned money. It will give you reason as well to work harder to get and achieve something. And Its also a way to refresh and recharge yourself after the long weekdays of work. So that it will give you enough energy for the week ahead.

8. Make a bucket list of your dreams, what you want and aspire in life and at work.

     Make an achievable and realistic bucket list of your dreams and what you want and aspire in life and   make it happen. Focus on achieving it. Set a goal and time frame for everything. And you can achieve it by working hard. It will give you a whole different meaning of work. Now, you need to work hard to achieve everything that's on the bucket list.

It's just a matter of good marketing (how well you will post your item). Think of ways to make your item shine and be eye catchy. If I were to choose I would prefer to "never forget any details"

lately I've noticed that I tend to forget most of things, even the last thing I did, or even the detailed thing I did.

Being a mom and a career woman portrays many roles. The long day at work, the chores and responsibilities at home, parenting and budgetting makes my mind to get so preoccupied. I even asked hubby, have I done this, have I done that.. (simple things that I usually forgot). So what I did is to take note. So if ever I forgot a thing I can recall it through my notes.

As a woman I love chocolates, Its one of my bestfriend, I eat chocolate whenever I'm sad, happy or just in an ordinary day. Admitedly, I can say that I have a sweet tooth. And kitkat is one of my favorite chocolate.. coz its chocolatier but not too sweet (just the right blend) and with a crunchy wafer inside.

I can't resists to buy it whenever I passed by a groceries or a drug store w/supermarket. Its my little indulgence and a break time mate.
Just a little break time , relaxation mode with a pack of kitkat.. makes my mind calm & relax, an escape to all the problems and everything that bothers my mind. Relaxing makes your mind sharp and attentive.


Chocolate gives you energy, that makes you alert and attentive. So Kitkat will help you unlock this skill.


So whenever you feel so stressed or just whenever you need to relax, have a break, have a kitkat.

Ordering Guidelines:
1. We encourage large food orders to be placed at least two (2) days in advance to ensure adequate preparation and due accommodation of your request.
2. All food orders shall be placed in disposable containers.
3. We will be requiring 50% down payment upon confirmation with the remaining balance payable on or before pick up of your order.
4. Cancellation may be done one (1) day before your scheduled pick up time. Otherwise, it will result to the forfeiture of the 50% down payment made.

Reminders on safe food handling:
1. Take home food is best when consumed immediately.
2. Avoid keeping in hot areas.
3. Refrigerate if not consumed within two (2) hours.
4. Adequately reheat refrigerated food before consumption.

When we went to Puerto Galera we got free HBC Gift certificates aside from free fan from their promotional booth at the White Beach. It entitles me to a free facial.
 


I've learned that there are many beauty services they offer aside from their well-known beauty products and vaciador services. They have Makeover zone in their branch. which offers Exclusive services for free Facial, Make-up application, Foot-spa, Diamond Feel, skin analysis and Hair coloring. You need to purchase some products with a minimum amount then you'll get the service for free.
Example, you need to purchase a minimum of Php300.00 for Hair color and then they will give free application service. You will need to purchase worth Php400.00 of skin care products mostly like, toners, facial wash, whitening cream etc for you to avail the free facial. The items you purchased will not be used so you can use it at home. Sulit di ba!
You dont need to spend too much. They also cater this to men.

Last Sunday, we used the GC to pamper ourselves. So we went to HBC outlet near our place.
for me to have diamon feel treatment after the facial we only need to purchase worth Php200 of facial products. We just bought a toner and a whitening cream. And were all set for free facial for my hubby and a free facial and diamond feel for me. We enjoyed the free service courtesy of HBc.
I was amazed of how long the lines are, it only shows that they have patronizers. Well, with a little purchase you'll get the service and you get to take home the item as well (except for the hair color). The price is cheaper than going to a salon nor a derma. Sulit di ba? :)

all of my stubborn blackheads and acne was removed. I feel better that my face is now clearer and pimple free.
I also wanted to have my hair colored, but due to some issues re: my previous hair color, it is not adviceable to have another hair color this time.
Truly a make-over experience.


We'll sure to come back to their store to have free service again (of course to purchase first to avail it). Thanks HBC for the free GC and service.

What to consider when planning to go to Boracay?



Boracay-one of the most famous summer destinations. Known for its white sand and night life.

Have you been to Boracay? If your a first timer, this is a must read.


1. Decide to travel by plane or by Boat.

Travel by plane=traveling thru plane is the fastest way of getting to boracay, for just about 45minutes of travel via air.
You may choose whether to land directly to caticlan or to Kalibo.

Via Caticlan airport=if you decided to land directly in Caticlan a lesser travel time, however the airport of Caticlan is way smaller than in Kalibo so flights to Caticlan are very limited and often sold immediately.
 

Via Kalibo, Aklan airport=airfare bound to kalibo is way cheper than those bound to caticlan, however, you'll need to pay almost 175-300 pesos van or bus fare to Caticlan which if you'll sum up its almost the same rate of the airfare to Caticlan and a 2hour long travel from Kalibo to Caticlan.

You can get promo fare if you plan ahead of time. Cebu Pacific and Airasia (formerly zest-air) held their promos (piso fare or other lower rates promo) mostly during holidays.  you may save a lot if your going to book on their promo fares.  So plan ahead of time and wait for their promo. You may book online or at the nearest ticketing office in your area.

Travel by boat=There are ships bound to Caticlan Jelly Port from Batangas Port like 2go travel or Montenegro Lines. An 8hour travel via sea. You may book online thru their eticket or at the nearest ticketing office in your area.


2. Season

Low Season=(Jun 16 -Oct 15)
During this season, where humid and rainfalls and the Island is not that crowded fares and accommodations is at its lowest rate.

Regular  Season=(Oct 15 - Jun 15)
rate are more high than the low season. Also crowded due to summer season.

High Season=(Xmas, New Year,Chinese NY, Holy Week & Special Holiday) a Season where beaches are in demand, due to hot weather and holidays. Accommodations rate doubled the price during this time. The beach is crowded with tourists, foreigners and backpackers.


3. Location
Boracay has 3 major stations.


Station 1=where you will walk in a finer sand and most high-ends and luxury resorts are located. So if you really wanna enjoy the beach away from the noise of bars and night life and can afford and have a budget, here is the place for you to relax.

Station 2=where most establishments are located, this station is highly commercialized, almost everywhere you look there are bars, restos, hotels and other establishments. At night this station is mostly known for bar goers, who wanted night life. Budget accommodations are located here.

Station 3= accommodations are cheaper here. Less crowded also

btw, the main transportation in Boracay Island is tricycles. But if your on the beach, prepare your legs if you wanna explore these 3 stations. Coz you can only explore this through walking.

4. Plan your activities in Boracay.

compared to other beaches,
Boracay has longer shore, whiter and finer sands and lots of fun activities to do..
 

There are bunches of water activities also... reef walking, para sailing, kayaking, island hopping, banana boat, jet ski ride and para sailing (available at station 3).

There are also land activities as well, the atv ride, now I heard that there are zip line and some museums opened or do a land day tour via tricycles.

or simply stay at the beach, swimming, walking near the shore or just wait for sunset.


To sum it up,

-You need to consider the time you'll spend on travel, a lesser time travel will give you more time to dwell on other things. You may spend this time for relaxation, family bonding and enjoyable activities.

and also a cheaper mode of transportation will save you money which you may spend on some other things like activities, souvenirs, a must try food, etc.

A must try Paluto is available in Talipapa. Where you will buy your ingredients in the market and you some restaurants offers cooking it for you with minimal charge comes with a rice and soft drinks. Love the seafood's and how they turned a simple dish into a delicious one.


-an organized plan will lead you to a well spent summer/holiday or just simple vacation.
